- 1 cup shredded purple cabbage
- 1 medium carrot, grated
- 1/2 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 2 teaspoons sugar
- 1 teaspoon celery seeds
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Instructions:
- Combine the shredded green cabbage, shredded purple cabbage, and grated carrot in a large mixing bowl. Toss them together until well mixed.
- Mix the mayonnaise, apple cider vinegar, sugar, celery seeds, salt, and ground black pepper in a separate smaller bowl. Mix until the dressing is smooth and well combined.
- Pour the dressing over the cabbage and carrot mixture. Toss the ingredients together until the cabbage and carrot are evenly blended with the dressing.
- Taste the coleslaw and adjust the seasonings according to your preference. You can add more salt, pepper, or sugar if desired.
- Cover the coleslaw with plastic wrap and refrigerate it for at least 1 hour to allow the flavors to meld together and the cabbage to soften slightly.
- Before serving, give the coleslaw a good stir to redistribute the dressing. If desired, you can garnish it with additional celery seeds or chopped fresh parsley.
Serve the delicious coleslaw chilled as a side dish or a topping for sandwiches, burgers, or tacos. It’s a refreshing and crunchy addition to any meal. Enjoy your homemade coleslaw!
