For the Salad:

  • 1 garlic clove, minced
  • Freshly ground black pepper, to taste
  • Salt, to taste
  • 1 teaspoon Worcestershire sauce
  • 1 head of romaine lettuce, washed and torn into bite-sized pieces
  • 2 slices of rustic bread, cut into cubes

For the Dressing:

  • 1 garlic clove, minced
  • Juice of 1/2 a lemon
  • 2 anchovy fillets, finely chopped or mashed (optional)
  • 2 egg yolks
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper to taste

  1. Preheat the oven to 375°F (190°C).
  2. Combine the minced garlic clove, freshly ground black pepper, salt, and Worcestershire sauce in a mixing bowl. Stir to create a paste.
  3. Place the cubes of rustic bread on a baking sheet. Drizzle with olive oil and sprinkle with the prepared garlic paste. Toss the bread cubes to coat them evenly. Bake in the preheated oven for 10-15 minutes or until golden and crispy. Set aside.
  4. Combine the torn romaine lettuce leaves and the prepared croutons in a large salad bowl.
  5. In a separate bowl, prepare the Caesar dressing. Whisk together the minced garlic clove, lemon juice, anchovy fillets (if using), egg yolks, grated Parmesan cheese, olive oil, salt, and freshly ground black pepper. Continue whisking until the dressing is smooth and well combined.
  6. Drizzle the Caesar dressing over the romaine lettuce and croutons. Toss the salad gently to ensure all the ingredients are coated with the dressing.
  7. Serve the Caesar salad immediately, garnished with additional grated Parmesan cheese if desired.
