Ingredients:

  • 1/2 cup olive oil
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 pound large shrimp, peeled and deveined
  • Skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)

Instructions:

  1. In a mixing bowl, combine the olive oil, chopped fresh parsley, lemon juice, minced garlic cloves, tomato paste, dried oregano, salt, and ground black pepper. Stir well to create the marinade.
  2. Add the peeled and deveined shrimp to the marinade. Toss the shrimp to coat them evenly with the marinade. Let the shrimp marinate in the refrigerator for 20-30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated shrimp onto skewers, piercing each shrimp through the tail and the head to keep them in place.
  5. Place the shrimp skewers on the preheated grill. Cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Avoid overcooking to maintain their tenderness.
  6. Once cooked, remove the shrimp skewers from the grill and transfer them to a serving platter.
  7. Squeeze fresh lemon juice over the grilled shrimp for an extra burst of flavor.
  8. Serve the grilled shrimp hot as an appetizer or main dish with your favorite side dishes like rice, grilled vegetables, or a fresh salad.
