Ingredients:
- 1/2 cup olive oil
- 1/4 cup chopped fresh parsley
- 2 tablespoons lemon juice
- 3 garlic cloves, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 pound large shrimp, peeled and deveined
- Skewers (if using wooden skewers, soak them in water for 30 minutes before grilling)
Instructions:
- In a mixing bowl, combine the olive oil, chopped fresh parsley, lemon juice, minced garlic cloves, tomato paste, dried oregano, salt, and ground black pepper. Stir well to create the marinade.
- Add the peeled and deveined shrimp to the marinade. Toss the shrimp to coat them evenly with the marinade. Let the shrimp marinate in the refrigerator for 20-30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers, piercing each shrimp through the tail and the head to keep them in place.
- Place the shrimp skewers on the preheated grill. Cook the shrimp for 2-3 minutes per side or until they turn pink and opaque. Avoid overcooking to maintain their tenderness.
- Once cooked, remove the shrimp skewers from the grill and transfer them to a serving platter.
