Ingredients:

  • 8 ounces of pasta (such as fusilli or penne)
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • 1 bell pepper, diced
  • 2 tablespoons vinegar (such as red wine vinegar or balsamic vinegar)
  • 1/2 teaspoon salt
  • 1/4 cup grated Parmesan cheese
  • 1 small zucchini, diced
  • 1/4 cup sliced olives
  • 1 cup cherry tomatoes, halved
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon pepper

 

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain the cooked pasta and rinse it under cold water to cool it down. Set aside.
  2. Combine the cooked pasta, olive oil, chopped parsley, diced bell pepper, vinegar, salt, and grated Parmesan cheese in a large mixing bowl. Toss the ingredients together until well combined.
  3. Add the diced zucchini, sliced olives, halved cherry tomatoes, dried oregano, and pepper to the bowl. Gently toss the ingredients again to distribute them evenly throughout the pasta salad.
  4. Taste the pasta salad and adjust the seasonings if needed, adding more salt, pepper, or vinegar according to your preference.
  5. Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 1 hour before serving. This will allow the flavors to meld together and the salad to chill.
  6. Just before serving, give the pasta salad a final toss to redistribute the dressing and ingredients. You can garnish it with additional parsley or Parmesan cheese if desired.
  7. Serve the refreshing pasta salad as a side dish or a light main course. It’s perfect for picnics, potlucks, or a quick and easy meal. Enjoy!
